These pies have no added sugar and and even pack in some protein. Whether you’re craving desserts or just celebrating Pi Day, these sweet treats are perfect for any occasion.

Healthy Mini Banana Cream Pies

Ingredients

Crust

  • 1/4 cup almonds
  • 1/4 cup dates, pitted and chopped
  • 2 tablespoons oat flour (certified gluten-free if necessary)
  • 4 tablespoons coconut oil
  • Pinch of salt

Banana Protein Cream

  • 2 bananas, frozen and chopped
  • 1 scoop vanilla protein powder
  • 2 tablespoons coconut cream or milk
  • Optional toppings: toasted coconut, sliced bananas

Directions

For the crust:

Add almonds and dates in a food processor and pulse until crumbs form. Add oat flour, coconut oil and salt, and process until combined. Press crust into molds and refrigerate for 30 minutes.

For the pudding:

Add all three ingredients to a food processor and process until completely smooth. Divide among molds. Top with sliced bananas and toasted coconut, if desired, and place in freezer for 1-2 hours.

Leave out to soften for five minutes before serving.
