Recipe: Sweet Potato Superfood Flax Fries

Maple-Flax-Sweet-Potato-Fries

Who can resist a side of fries? These sweet potato fries from Running with Spoons will leave you feeling satisfied. Sweet potatoes are packed with vitamin A and fiber, and these naturally sweet spuds are enhanced by a drizzle of maple syrup, while flax seeds provide a crunchy coating and a dose of omega-3s.

Maple Flax Sweet Potato Fries

Ingredients

  • 1 medium sweet potato
  • 2 teaspoons maple syrup
  • 1 tablespoon ground flax
  • Sea salt to taste
  • Cinnamon to taste

Directions

Preheat oven to 400ºF, and line a baking sheet with parchment paper.

Slice the sweet potato into fry shapes, cutting each piece about 1/4 inch thick.

Toss the fries and  the maple syrup in a large bowl. Sprinkle on the flax, sea salt and cinnamon, and toss to evenly coat.

Transfer to  the prepared baking sheet, and bake for 40 minutes, turning them halfway through.

Allow to cool slightly before enjoying.
