Simple Skirt Steak Stir-Fry
Ingredients
- 1 pound (450 grams) skirt steak, sliced against the grain
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, crushed
- 1 medium (120 grams) green bell pepper, sliced
- 1 cup (90 grams) sweet peppers, sliced
- 2 cups (320 grams) cooked rice (certified gluten-free if necessary)
- 1/2 cup (80 grams) cherry tomatoes, halved
- 4 large (180 grams) eggs, fried
- Salt and pepper, to taste
Directions
Spray a cast iron skillet with cooking spray, then place the steak in the skillet to sear. Add in the olive oil and garlic, mixing it well with steak.
Let the steak simmer on medium-high heat for about 10 minutes, then add in the peppers. Continue letting this simmer until the steak is well done.
While the steak is simmering, prepare the rice if you have not already done so.
Serve the steak, peppers, tomatoes and a fried egg over the rice, then salt and pepper to taste.
