Banana Nut Pancakes
Ingredients
- 1 1/2 cups whole-wheat flour
- 1 1/2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs, beaten
- 3 tablespoons cooking oil, plus more for greasing
- 3 medium ripe bananas, mashed
- 1 cup plain yogurt
- 2 tablespoons honey
- 1/4 cup crushed walnuts
- 2 medium bananas, sliced (optional)
Directions
In a bowl, mix dry ingredients: flour, sugar, baking powder and salt.
In another bowl, mix wet ingredients: eggs, oil and ripe bananas.
Fold dry ingredients into wet ingredients.
Heat a nonstick pan over medium heat. Lightly grease with oil. Pour batter onto heated surface, and cook on each side until golden brown.
While pancakes are cooking, mix together yogurt and honey. Once done, drizzle pancakes with honey yogurt. Top with banana slices and walnuts.
