Creamy chutney spread takes this turkey apple sandwich, courtesy of The Salt Solution Cookbook, from ordinary to exciting. Serve with a piece of fruit for a complete brown bag lunch. If you don’t have chutney on hand, substitute 1 tablespoon of apricot jam and a pinch of curry powder.
Turkey Apple & Chutney Sandwiches
Ingredients
- 1 tablespoon of chutney
- 1 tablespoon of reduced-fat sour cream
- 1 teaspoon of fresh lemon juice
- 4 slices of thin-sliced 100% whole wheat bread
- 1/2 cup fresh baby spinach
- 3 ounces of cooked unsalted sliced turkey breast
- 1 ounce of sliced reduced-fat swiss cheese
- 1 small granny smith apple, thinly sliced
Directions
Finely chop any large chunks in the chutney. Stir together the chutney, sour cream, and lemon juice in a small bowl until combined. Spread the chutney cream on 2 slices of the bread. Top each with the spinach, turkey, cheese, apple, and remaining bread slices. Cut in half to serve.
